Eggs baked in Hashbrown

This is an American style breakfast idea, originally made with glazed bacon. I found this recipe from binge watching Gordon Ramsey’s YouTube channel.

Obviously I had to add my own twist. And even though my hashbrown was a bit on the thin side (I was very sceptical about it), I still enjoyed this bad boy!

INGREDIENTS

  • 2 large potatoes
  • 1 onion
  • Ground/Smoked Paprika
  • Black pepper
  • Salt
  • Olive oil
  • 2 tblspoons butter
  • Ham and Tongue slices
  • 1 tblspoon brown sugar

METHOD

Peel and grate the potatoes and onion, Add some olive oil and season with smoked paprika and salt and pepper then squeeze the liquid out. This is very important thing to do as this will make your hashbrown crispy.

Pour olive oil into a hot pan and press down the hashbrown. Add butter flakes to the sides to caramelise the onion.

Use a plate to flip your hashbrown over and slide it back into the pan for the other side to cook.

Add your eggs onto the hashbrown and sprinkle some smoked paprika. Put this in a preheated oven for about 8 minutes.

Instead of bacon, I used slices of a ham and tongue roll. I fried them in brown sugar, butter and S+P. Oooooooou BABY!😋

I’m definitely trying this recipe again with more hashbrown this time.
