So today I decided to make Crispy Cauliflower tater tots. Delicious, healthy and different.
My dad is more excited about these tots than me😹
INGREDIENTS

1 large head cauliflower, broken into florets

1 medium sweet potato

1 large egg
-
1/2 cup grated mozzarella
-
1 tablespoon flour
-
1/4 finely diced onion
-
1/2 teaspoon salt
-
3 garlic cloves
-
1teaspoon black pepper
- Oil for your oven tray
INSTRUCTIONS

Preheat the oven to 180 degrees C.

Steam the cauliflower florets and diced sweet potato until tender.

Chop steamed cauliflower and sweet potato finely and mix with the egg, mozzarella, flour, onion, salt, garlic, and pepper.

Scoop approximately 1 heaping tablespoon(I won’t lie, I went crazy and made big and small tots lol), roll balls to make tater tots.

Place on oiled oven tray.
- Bake until golden brown and crispy, 18-24 minutes, turning half way through.

We want more of those recipes and would mind a low fat spatlho, as insane it sounds is doable.
